Channi
Channi coffee is one of the easiest and most affordable ways to brew at home - all you need is a cup and a tea strainer. If you're making the move from instant coffee but aren't ready to invest in equipment yet, this is the perfect place to start.
What you'll need
- 14g ground coffee (roughly 7 teaspoons), ground coarse
- Tea strainer / channi
- 2 cups and a kettle
- 140ml water at 94°C (about 1 minute 50 seconds off the boil)
- Scales if you have them - otherwise eyeballing is fine
- Muslin cloth (optional, but helpful)
How to brew

Add 14g of coffee directly into your cup.

Pour in 130ml of hot water.

Leave it to steep for 4 minutes - no touching.

Top up with the remaining hot water, or add milk to your liking.

At the 4 minute mark, give it 10 stirs.
A few tips to get the best from your cup
If you're getting a lot of grit or fine powder in your cup, drape a muslin cloth over the channi before pouring. Alternatively, try grinding your coffee a little coarser.
Very dark roasts can go even shorter than 3 minutes 30 - keep an eye on taste and adjust from there.
For medium-dark to dark roasts, or naturally processed coffees, pull it back to around 3 minutes 30 seconds.
Stick to a 4 minute steep for light to medium roasts.
